Almost 80 years ago as he began to plant his coffee plantations, our grandfather had the great vision to not be persuaded by newer hybrids that promised greater yields and better disease resistance, but compromised flavour. He decided to plant old world varieties with strong flavour profiles. He also had the vision to plant some varieties exclusively on certain plantations, creating their own micro-niche. And so today we can enjoy the privilege of tasting our beans by their botanical variety; such as Bourbon from El bosque, Catuai from San Antonio and Las Pilas, or Maracatu from Los Robles.
As we appreciate the vision,great effort and passion behind processing green coffee beans by their bean varieties, we wanted to bring that experience to our coffee lovers. It is exciting to discover the subtle cup characteristics behind a yellow Catuai, Bourbon or Maracatu.
However, not all beans can be picked, washed, dried and sorted according to their botanical variety. This type of work is immensely detailed, and many of the growers we source our beans from simply do not have the opportunities to do that. For those growers that are not yet able to do this detailed work, or simply do not count with enough yield of each variety for it to make sense economically, we have the honour spot of including them on Don Rey's Private Reserve. These are beans, handpicked by our father, based on a specific cup profile and of the utmost quality.
Just as Merlot or Malbec grapes from the same vineyard can exhibit wonderful yet different flavours, and as you might enjoy a Royal Gala apple more than a Macintosh, then you can also appreciate the subltities of Bourbon, Catuai beans, Maracatu and Don Rey's Private Reserve.
